ADEK IRMA SURYANI ZAI. Quality Control of Fresh Bread Products in Nikki Echo Business Payakumbuh City is Guided by YULIANDRI, SS, MTESOLLead and Dra. DARNETTI, Ak, M.Si.
Nikki Echo is one of the industries that process bread in Payakumbuh. The purpose of this study is (1) to identify the form of damage to fresh bread products in Nikki Echo's business (2) identify what factors cause damage to fresh bread products in Nikki Echo's business (3 ) identify the control of product damage in Nikki Echo's business. This research was conducted at Nikki Echo bread factory Jalan Marah Adin Tanjung Pauh Payakumbuh starting from February 19 to April 19 2019. The data used are primary data, namely data obtained directly in the field such as data on the amount of bread production/day, data of the number of damaged bread. Secondary data was obtained from books and journals related to research. The method used is Statistical Procurement Control (SPC) with a check sheet, histogram, control chart, and Fishbone Chart. Based on what has been done, it can be concluded as follows: (1) There are types of damage to fresh bread products that occur in Nikki Echo's business, namely fresh bread broken, burnt and there dirty (2) In control chart P there is still one point that exceeds the LCL limit , where where the center line value (CL) is 0.09956%, the upper control limit (UCL) is 0.12785%, and the lower control limit (LCL) is 0.07127% (3) Type of damage to white bread with a high percentage damage rate is damage to broken bread from total damage during a 44-day apprenticeship of 803, followed by damage to fresh bread products with 719 stools, and burnt white bread with lots of 517 pieces. (4) The factors that cause damaged bread products are derived from humans, the environment, methods and machines used.
