Fianda Coffee Roastery and Bar is a cafe that provides various types of
coffee such as espresso roasted and filter roasted. Filter roasted coffee is coffee
that is specially roasted for coffee drinks served with manual brew techniques and
espresso roasted coffee that is roasted to become espresso coffee drinks.This study
has the following objectives: (1) Identifying the product processing process at
Fianda Coffee Roastery and Bar, and (2) Analyzing the added value of coffee
processing at Fianda Coffee Roastery and Bar. The research was conducted from
April to May 2021. The research location is at Fianda Coffee Roastery and Bar.
Analyzed by the Hayami method. The data collection method used primary and
secondary data.The results of the study identified that, there are two types of
roasted coffee that are processed at Fianda Coffee Roastery and Bar, the first is
filter roasted and espresso roasted. Roasted coffee is also directly used as a drink
for manual brew types including: V60, Vietnam Drip, French Press, Japanese Style
and for espresso-based drinks: Coffee Milk Pulm Sugar, Coffee Milk Cheese,
Cappuccino, Latte, and Long Black.The percentage of added value ratio for
processing rice coffee into roasted coffee in a row for the five roasted coffee
products sold at Fianda Coffee Roastery and Bar are: A 69.44%, B 77,78%, C 50%,
D 23,08% , and E 41,18%. Meanwhile, the percentage ratio of added value for
further processing, from roasted coffee to beverages at Fianda Coffee Roastery and
Bar for the nine beverage products sold is as follows: M186,66%, M2 86,10% M3
87,04%, M4 85,60%, M5 84,39%, M6 87,60%, M7 82,72%, M8 85,12%, M9
88,84%.
